florentine-ish

florentine-ish

I’m not sure if this would be considered truly Florentine or not, but I’m going to pretend it is. This is my quick and easy bastardized version of Eggs Florentine. Sadly, it is without Hollandaise sauce (no time for that kind of goodness today), but some crumbled goat cheese brought my lunch back from over the top fat-free healthy craziness to a nice balance of delicious and good for you.

Sauteed garlic and spinach on toast. Topped with crumbled goat cheese, a perfectly poached egg (how did that happen?!) and fresh ground black pepper.

Holy shadoodle. It. Is. Cold. So cold I had a hard time convincing myself to open the fridge to make lunch. Once I got over the fear though, I found the ingredients for some good old-fashioned comfort food. I didn’t have the ingredients I was hoping for, but when you can make snow from a cup of boiled water outside (we did science experiments at breakfast today!), you forget about grocery shopping and make do with what you’ve got. And today, what I had, made a damned fine omelette.

Sauteed purple onion and spinach, cooked with a mixture of beaten eggs and cream in a frying pan. When the bottom looks like it’s almost ready, top it with a  generous sprinkling of goat cheese and throw it under the broiler until fluffy, and just golden. Toast with butter on the side. A warm and happy belly is guaranteed.

Sick kid at home today, again. Not much you can do about strep throat, except wait for the antibiotics to kick in, and the coughing, feverish, contagious part to be over. The upside is that I have company while working from home today. And a mini-me assistant.

A very simple lunch was requested by my lovely helper. Whole grain sourdough bread, slathered with natural almond butter, served with raw red peppers, and spinach leaves. Here’s to getting back to healthy.

quinoa salad with speck ham and Romano

My (super) mama is here for the week helping me get my shit together me get organized for the upcoming busy months. For lunch, we took a whole bunch of leftovers transformed them into a dee-licious salad.

In a small bowl throw in leftover quinoa and add the chopped veggies of your choice. We had snow peas, cherry tomatoes, Spanish onion, and orange pepper. Add balsamic dressing and mix well. Fill the bottom of a large bowl with fresh baby spinach, and top with the quinoa. Decorate with speck ham (leftover from mama’s fantastic Thanksgiving appetizer), and add shaved Romano. Share and enjoy!

Quick lunch today. Are there ever enough hours?

Big bowl, toss in baby spinach, chopped green onion, a sliced mushroom, and crumbled extra old cheddar cheese. Top it with pulled and reheated honey garlic chicken bits. The honey garlic sauce makes a lovely warm dressing.

Lots of fresh ground pepper and off you go.
