It’s been one of those weeks where I tried to get everything done. Except for grocery shopping. That didn’t get done. The only vegetable in the fridge was a cucumber and the only fruit was a lime. I found one lonely package of udon in the cupboard, some frozen shrimp in the freezer and luckily no matter how far behind I am on grocery shopping I will never ever run out of condiments.
An onion from the garden fried with shrimp. Udon warmed in the pan and everything tossed in a sauce of toasted sesame oil, soy sauce, brown sugar, chilli paste, peanut butter, minced garlic and chicken bouillon. Garnished with chives from the garden, and the lonely fruit and vegetable from the crisper. Green chopsticks to add one more green to the plate.

When preparing food, I am of course always hoping it will be delicious, but sometimes, something happens and you surpass those hopes and make the best, dish, ever. We made wonton soup last night, for the first time. Our wontons were unorthodox, and our recipe was made up, but someone must have spilled a bit of magic into the pot because it was amazing.
I chopped up some leftover pork tenderloin, baby shrimp, and ginger, mixed it with an egg, a dash of Bragg’s soy sauce and some rice vinegar. We wrapped spoonfuls of this mixture in wonton wrappers and dropped them into a pot of boiling chicken stock, along with chopped bok choy, green onions, and carrots. All the way through dinner I was hoping there would be some soup leftover for lunch. My dream came true.

This week has been a write off as far as getting any work done… PA days, sick kids, doctors appointments, and I could go on, but I won’t. So! Three people (with very different ideas about delicious) home for lunch today. How to make one meal that everyone will eat and enjoy? Salad rolls is one of my favourite answers to that question. A bit more work than I usually put into lunch, but worth it for the fun.
To start, whip up some peanut sauce. For this one, I fried some chopped garlic and onions, added some chilli powder, water, brown sugar, and natural peanut butter. Let it thicken, then cool a bit, stir in fresh lime juice and set aside. Cook rice vermicelli, and set it aside to cool. Julienne your favourite fillings. We had carrots, yellow pepper, cucumber, lettuce, and avocado. For protein, I thawed out some pre-cooked shrimp, and for a flavour zing, there can never be enough fresh cilantro. All of this goes in the middle of the table. Bring a bowl of hot water, big enough to immerse the rice paper. Put them in one at a time, and when soft, pass them out to the assemblers/eaters. The kids get to pick their own fillings and have a blast making all sorts of unconventional ‘rolls’. My daughter likes to make ‘noodle purses’, while my son excels at ‘everything mash-ups’. No matter what the shape, it was all delicious.
