Perhaps I could have had a green salad, maybe some crudités, or even some sliced fresh fruit. But no. Today I chose to get my daily recommended servings of vegetables by smothering them in cheese, putting them between two slices of bread, and throwing that tower of yum into a sandwich press.
A slice of bread, topped with a layer of old cheddar, a chopped tomato, more cheese, lots of chopped onions, and more bread. Put it in the sandwich press until melty, and serve with some zingy Sriracha mayonnaise. Sriracha can also be considered a vegetable in times of need.

Well, I started making a BLT. I had all the fixings. But I also had other fixings. And… it grew from there. Presenting my BSTA & M.
Toast slathered in mayo, piled high with baby spinach, leftover brunch bacon, avocado, and tomatoes. Black pepper, black pepper, black pepper, and topped with more mayo toast. Now, how do I make a BSTA & M sound as good as it tastes? Got some thinking to do.

Sick kid at home today, again. Not much you can do about strep throat, except wait for the antibiotics to kick in, and the coughing, feverish, contagious part to be over. The upside is that I have company while working from home today. And a mini-me assistant.
A very simple lunch was requested by my lovely helper. Whole grain sourdough bread, slathered with natural almond butter, served with raw red peppers, and spinach leaves. Here’s to getting back to healthy.

Rocket, rocket, rocket! Or arugula, if you must, but rocket just sounds like more fun. Years ago, I would accidentally encounter it, buried in mixed greens, but it wasn’t until I spent some time in England and then South Africa, that I discovered it was a green all of its own! And, they call it rocket. How can you beat that?
GF bread as usual, with slices of brie on both pieces, one topped with thinly sliced, very ripe Rocha pear. Add a pile of rocket, close it up, and throw it in the sandwich press. Melted brie, jammy pear and zippy rocket… mmmm.
