It’s been a long, cold, and un-relentless winter, but it’s icy claws have finally released us! Sunshine and flowers and birds and green things are here once again, and it makes me crave fresh and light veggie-based foods. Last night for dinner, we had a family favourite… salad rolls. I think the kids like it as much for the flavour as for being able to make their own (very interestingly shaped) rolls.
Leftover vermicelli noodles, shredded carrots, sliced red peppers, iceberg lettuce, lots of cilantro and some peanut sauce, all piled on and rolled up into a rice paper wrap. Bring on the sunshine… I want to eat more fresh meals like this.

It’s been an incredibly busy 6 weeks of school, and I was sick as a dog throughout. The day after it was done, I had planned to stay in bed, resting my weary bones. Of course though, as Murphy would have it, my youngest child’s cold trumped mine and for two days, we have been trying to enjoy ourselves, miserable together. Lunch was simple because most flavours are wasted on us until our heads de-clog.
We had tortillas, covered in humous and mozzarella, rolled up and baked until melty. On the side, we had red pepper slices. For an appetizer, we had the wonderfully sweet “baby pepper” prizes we found.

My seven-year-old has very selective tastes in food. A few weeks ago, I offered her a bite of a tuna salad sandwich with (God forbid!) a wee bit of mayonnaise, onions and celery in it. I was completely prepared for full-body shivers, pleadings for water to wash her mouth, and an absolute rejection of ever trying anything with that many ingredients mixed up together again. Instead, I was floored with, smiles, and “Yum!”s, and pleadings for more. Will the wonders ever cease?
I made her a tuna salad sandwich today for school. One can of tuna, drained and mixed with a tiny dollop of mayo, as well as some finely chopped onion and red pepper. For the big person’s lunch, add extra everything to the leftover tuna salad. Extra mayo, extra onion, extra red pepper, salt, pepper, dried parsley. Make some toast, add more extra mayo (I might have a bit of a problem), and some baby spinach. Extra yum.

Sick kid at home today, again. Not much you can do about strep throat, except wait for the antibiotics to kick in, and the coughing, feverish, contagious part to be over. The upside is that I have company while working from home today. And a mini-me assistant.
A very simple lunch was requested by my lovely helper. Whole grain sourdough bread, slathered with natural almond butter, served with raw red peppers, and spinach leaves. Here’s to getting back to healthy.

I have a hard time eating salads sometimes. It bugs me when one mouthful is all greens, and the next one is all tomatoes or what have you. Perhaps I have issues, but I want to taste everything, in every bite, without having to perform a circus act on my fork to get it all into my mouth. For those reasons, this salad rocks, my, world. It is also a great way to use up odds and ends of veggies from your crisper.
In my crisper, I had purple onion, zucchini, mushrooms, carrots, red pepper and mixed greens, but feel free to put anything you want in. Chop it all up super fine and add the secret ingredients that take this salad from meh to awesome… Avocado and cheese (I used extra old cheddar), both diced finely. Mix everything up with some freshly ground black pepper, and I swear you won’t even notice this salad has no dressing. Try it. Really.
