Another ridiculously cold, all things warm and snuggly kind of day. But I’m done complaining about the cold now. We’re looking forward to plus seven degrees celsius and lots of rain in a couple of days. What the what!? Never mind. Hunkered down with slippers the size of small bears, two cats fighting for my lap, and a warm and melty burrito to fill my belly. All is well.

Hot refried beans, sliced cherry tomatoes, green onion, avocado, mozzarella, heaps of cilantro, and for extra warmth, dribbles of chipotle sauce. All rolled up in a spinach tortilla and served with generous dollops of sour cream and salsa.

For many years, I complained that no one in my home loved to eat lamb. I always made something else, so that dinner would not go uneaten. Well, the grass is always greener let me tell you. My three and seven-year-olds now turn into wild carnivores whenever lamb is served. Vegetables? What’s that? Side dishes? What are those? Cutlery? Forget it. Gimme the flesh.

So as it turns out, leftover from last night’s dinner, there were roasted ruby potatoes, homemade tzatziki, mixed greens, and, no lamb. I sliced the potatoes in half, chopped up some green onion and yellow pepper, and mixed it all up with the tzatziki. Greek-ish potato salad served on mixed greens and topped with green onions and black pepper. And no lamb. Did I say that already?

I love risotto. I suck at making it. It has been a long time since I made accidental mortar, so perhaps I should try again one day soon. Or not. Until then, I’ll enjoy it when made by others or go with the pseudo…

Leftover rice, leftover roast chicken pulled into pieces, green onion, and grated pecorino romano cheese, tossed in a bowl, mixed up, and nuked until melty. Top with more green onions and grated cheese.

Quick lunch today. Are there ever enough hours?

Big bowl, toss in baby spinach, chopped green onion, a sliced mushroom, and crumbled extra old cheddar cheese. Top it with pulled and reheated honey garlic chicken bits. The honey garlic sauce makes a lovely warm dressing.

Lots of fresh ground pepper and off you go.
