Warm belly soup

The weather is unseasonably warm this November afternoon but it still feels like fall. Shorter days and cooler nights have me thinking of hibernation and those extra layers I’ll want to put on to keep warm until spring.

Panfried leeks and garlic, boiled with thinly cut potatoes in a lamb bone stock from the freezer. Pureed when cooked through. A squiggle of cream, a squiggle of Sriracha and then topped with coarse salt, fresh ground pepper, and grated parmesan. If that doesn’t warm your belly then I don’t know what will.

Why am I so hungry!!? Oh. Right. It’s 2 o’clock and I haven’t had lunch yet. Oh. Wait. I haven’t had breakfast yet either. Let’s fix both problems with breakfast for lunch for breakfast. And maybe dinner as well depending on how much work I try to get done. Homemade nutty granola sprinkled on yogurt. Served with coffee so strong your spoon will stand up, sweetened with maple syrup and lightened with cream.

For homemade granola put 8 cups of your favourite nuts, seeds,  grains and spice in a large bowl. In a saucepan combine maple syrup, butter and vanilla (about 2 cups total) and warm it up. Pour over dry ingredients, mix, and bake at 350 until golden. Add dried fruit while it’s cooling. And don’t forget to eat breakfast.

You know that cool dark shelf in your kitchen, where you keep the onions and root vegetables and such? I always forget about that shelf. That’s the shelf that turns potatoes into plants. About a week ago I found a butternut squash there, that I can barely remember buying. Time to make soup before it walks away! I cut it into chunks and roasted it with some onion and garlic. Then the kids came home, so I put it in the fridge, and forgot about it, again. A few days later (today), I found it, once again, and finally finished making the soup.

Roasted butternut squash, onion, and garlic, pureed and added to a pot of veggie stock. Simmered for a bit, then added some cream and a sprinkling of salt. Served with a dollop of yogurt, Marie Sharp’s hot sauce, and some parsley I had forgotten about in the dehydrator.

Holy shadoodle. It. Is. Cold. So cold I had a hard time convincing myself to open the fridge to make lunch. Once I got over the fear though, I found the ingredients for some good old-fashioned comfort food. I didn’t have the ingredients I was hoping for, but when you can make snow from a cup of boiled water outside (we did science experiments at breakfast today!), you forget about grocery shopping and make do with what you’ve got. And today, what I had, made a damned fine omelette.

Sauteed purple onion and spinach, cooked with a mixture of beaten eggs and cream in a frying pan. When the bottom looks like it’s almost ready, top it with a  generous sprinkling of goat cheese and throw it under the broiler until fluffy, and just golden. Toast with butter on the side. A warm and happy belly is guaranteed.
