It’s December, and cold, and the sun is out, and the kids are barefoot in the backyard. Somehow it’s lunchtime already and I haven’t had breakfast. It doesn’t matter if it’s my morning or midday meal because it will be the same thing regardless. The same old same old cheese toast but with a fresh and crisp locale.
Bread toasted and topped with melty cheese. Extra old cheddar is my go-to. Topped again with cherry tomatoes and sprinkled with black pepper. Served today with a cup of extra strong coffee and a liberal dose of December sunshine.

Ruts, grooves, patterns. Not bad things in and of themselves, but sometimes, when they get too deep, things need a bit of a shakeup. Toss the deck into the air, and see what new pattern appears. It’s good for your soul. My lunch today is pretty much the same as so many sandwiches before it, but the intentions and thoughts behind it are new. A fresh start with tried and true ingredients.
Toasted bread, mayo, mayo, mayo, sliced tomatoes, avocado, and extra old cheddar, a pile of greens, and a serious sprinkling of cayenne to spice up an old favourite.

I am not sure what it is about today’s never-ending snowfall that makes me think of melted cheese, but I’m not going to fight it. Especially after hauling a hundred pounds of children to school on an unwaxed sled. And also especially, after shovelling twice today, and you can’t even tell. I think dinner today may also need to include melted cheese.
Toast, put under the broiler with cheese, onions and tomatoes, until just bubbling, and topped with shovels of black pepper. Served with butternut squash soup I rescued from the freezer. Bring on the snow… I mean melted cheese.

I have a hard time eating salads sometimes. It bugs me when one mouthful is all greens, and the next one is all tomatoes or what have you. Perhaps I have issues, but I want to taste everything, in every bite, without having to perform a circus act on my fork to get it all into my mouth. For those reasons, this salad rocks, my, world. It is also a great way to use up odds and ends of veggies from your crisper.
In my crisper, I had purple onion, zucchini, mushrooms, carrots, red pepper and mixed greens, but feel free to put anything you want in. Chop it all up super fine and add the secret ingredients that take this salad from meh to awesome… Avocado and cheese (I used extra old cheddar), both diced finely. Mix everything up with some freshly ground black pepper, and I swear you won’t even notice this salad has no dressing. Try it. Really.

I love risotto. I suck at making it. It has been a long time since I made accidental mortar, so perhaps I should try again one day soon. Or not. Until then, I’ll enjoy it when made by others or go with the pseudo…
Leftover rice, leftover roast chicken pulled into pieces, green onion, and grated pecorino romano cheese, tossed in a bowl, mixed up, and nuked until melty. Top with more green onions and grated cheese.
