You know that cool dark shelf in your kitchen, where you keep the onions and root vegetables and such? I always forget about that shelf. That’s the shelf that turns potatoes into plants. About a week ago I found a butternut squash there, that I can barely remember buying. Time to make soup before it walks away! I cut it into chunks and roasted it with some onion and garlic. Then the kids came home, so I put it in the fridge, and forgot about it, again. A few days later (today), I found it, once again, and finally finished making the soup.
Roasted butternut squash, onion, and garlic, pureed and added to a pot of veggie stock. Simmered for a bit, then added some cream and a sprinkling of salt. Served with a dollop of yogurt, Marie Sharp’s hot sauce, and some parsley I had forgotten about in the dehydrator.
