I love risotto. I suck at making it. It has been a long time since I made accidental mortar, so perhaps I should try again one day soon. Or not. Until then, I’ll enjoy it when made by others or go with the pseudo…

Leftover rice, leftover roast chicken pulled into pieces, green onion, and grated pecorino romano cheese, tossed in a bowl, mixed up, and nuked until melty. Top with more green onions and grated cheese.

New camera! So exciting! A lot to read and learn, it’s like having an iPad built into a camera. Way too much fun.
My usually absent camera assistant was waiting patiently to try and steal my lunch. Toasted GF bread, thick cream cheese, purple onion shaved paper-thin, lox, capers, and lots of fresh ground black pepper. A side salad of halved cherry tomatoes with balsamic dressing.
I didn’t share.

This is my last iPad lunch photo! I am so very excited to have a new toy. I haven’t bought myself a new camera since my pre-children days, and just to date myself, digital cameras were new back then. Sigh.
I rushed to the store this morning, found my match, ran home so very excited to play with my new baby… and now… I wait… for the battery… to charge. Ah well.
So iPad, thanks for the pictures but I’m afraid I have to let you go. You are exiting with a cheese and tomato sandwich on GF bread. Mayo, mustard, greens and black pepper. Pickles on the side.

We had our 7th annual Hallowe’en play date cum family gathering on the weekend. It started, 7 years ago, as a dozen new moms dressing up our puddles of baby for our own entertainment. These days, it has grown to include moms, dads, and many many children. A potluck with a creepy theme makes for a very interesting lunch. Or maybe you go hungry if you get queasy easily.
Today it is a lunch of leftover maggots cooked in blood, topped with intestine filling. It is much tastier than it sounds. 🙂

My (super) mama is here for the week helping me get my shit together me get organized for the upcoming busy months. For lunch, we took a whole bunch of leftovers transformed them into a dee-licious salad.

In a small bowl throw in leftover quinoa and add the chopped veggies of your choice. We had snow peas, cherry tomatoes, Spanish onion, and orange pepper. Add balsamic dressing and mix well. Fill the bottom of a large bowl with fresh baby spinach, and top with the quinoa. Decorate with speck ham (leftover from mama’s fantastic Thanksgiving appetizer), and add shaved Romano. Share and enjoy!

Quick lunch today. Are there ever enough hours?

Big bowl, toss in baby spinach, chopped green onion, a sliced mushroom, and crumbled extra old cheddar cheese. Top it with pulled and reheated honey garlic chicken bits. The honey garlic sauce makes a lovely warm dressing.

Lots of fresh ground pepper and off you go.
