the table of life

My mama came to help us with moving in part two. We’ve been here a month and things are finding their places. Or getting tossed. Be functional… or so awesome you can justify your space in my cozy little nest… or get the hell out of my house. The clunky old table 300 pound table is gone. Mama got us a brand new, astonishingly white, shiny, and bright kitchen table. We’ll see how long that lasts, and until then it will be the backdrop to my lunchtime ramblings. Mama also left some homemade potato and leek soup.

If my mom didn’t leave any soup in your fridge, see if there’s a can, or jar, or pot of soup anywhere nearby. Add some garlic croutons, finely chopped chives, and fresh ground black pepper. They pretty much go with everything. Sit down at a new table and enjoy the view. And of course the soup.

Ruts, grooves, patterns. Not bad things in and of themselves, but sometimes, when they get too deep, things need a bit of a shakeup. Toss the deck into the air, and see what new pattern appears. It’s good for your soul. My lunch today is pretty much the same as so many sandwiches before it, but the intentions and thoughts behind it are new. A fresh start with tried and true ingredients.

Toasted bread, mayo, mayo, mayo, sliced tomatoes, avocado, and extra old cheddar, a pile of greens, and a serious sprinkling of cayenne to spice up an old favourite.

It’s been a long, cold, and un-relentless winter, but it’s icy claws have finally released us! Sunshine and flowers and birds and green things are here once again, and it makes me crave fresh and light veggie-based foods. Last night for dinner, we had a family favourite… salad rolls. I think the kids like it as much for the flavour as for being able to make their own (very interestingly shaped) rolls.

Leftover vermicelli noodles, shredded carrots, sliced red peppers, iceberg lettuce, lots of cilantro and some peanut sauce, all piled on and rolled up into a rice paper wrap. Bring on the sunshine… I want to eat more fresh meals like this.

I’m not sure what it is about this flavour combination that says comfort food to me but it does. There are so many dishes you could make with these same ingredients, but a long time favourite is a simple, and nearly perfect (bacon could perhaps better it) sandwich.

Two pieces of soft bread toasted lightly, slathered with mayo and given a generous sprinkling of cayenne pepper. One slice topped with iceberg lettuce and avocado, the other with thinly sliced tomatoes and extra old cheddar cheese. Freshly ground black pepper on everything and yum.

It’s been an incredibly busy 6 weeks of school, and I was sick as a dog throughout. The day after it was done, I had planned to stay in bed, resting my weary bones. Of course though, as Murphy would have it, my youngest child’s cold trumped mine and for two days, we have been trying to enjoy ourselves, miserable together. Lunch was simple because most flavours are wasted on us until our heads de-clog.

We had tortillas, covered in humous and mozzarella, rolled up and baked until melty. On the side, we had red pepper slices. For an appetizer, we had the wonderfully sweet “baby pepper”  prizes we found.

It is the fault of the cold weather. I have difficulty eating fresh vegetables when the ridiculously cold weather screams “Hibernate! Stuff your cheeks with calorie-packed goodness and go to sleep! I’ll wake you when it warms up.”. I listen to these histrionics all too easily, and then find myself deprived and craving greens.

Fill a large bowl with a bag of rocket,  shredded carrot, quartered cherry tomatoes and diced avocado. If it’s really cold out, add some goat cheese so you don’t starve while tucked under the blankets waiting for spring.
