korma karma

korma karma

Today is a day of tedious, unpleasant paperwork, that I really would rather not do. The sun is shining outside (in the first time in what feels like forever), and it is calling my name! But alas, I have to say I will come and play another day. Back to the paperwork that I do not want to do. Getting it done will bring sunnier days to come.

Last night’s leftover rice and chicken korma, warmed in a bowl. Topped with a generous dollop of yogurt, some mango chutney, and fresh chopped cilantro. Even the crappiest day can be made better with a bowl of goodness like that.

condiment me

condiment me

My baby boy turned four the other day and requested pepperoni pizza for his family dinner party. Can’t say no to that, but it makes for pretty unexciting leftovers. I find that when one is faced with uninspiring food, the solution is often condiments. I have even had an occasion when food has been nothing more than a vessel to get that sauce into my mouth. My son has inherited that gene. I caught him eating cream cheese with a spoon once, and mayonnaise too. The list goes on.

A bit of finely diced garlic and onion, mixed into half yogurt, half sour cream, with a dash of apple cider vinegar, and a bunch of fresh dill. Takes leftover pizza to new and exciting ‘condimented’ heights.

roast beast

roast beast

What can I say… I am not a vegetarian. Was. But not now. Right now, I like flesh. And I like it rare. Leftover roast beast sandwich.

GF toast, lots of mayo, some hybrid tomatoes (that’s a whole other story), extra old cheddar, rocket, still mostly rare reheated roast beef, and a slathering of Maja’s Honey Mustard. She makes it on Manitoulin Island in small batches. This one has Riesling, honey, and orange rind, and I could see myself eating it by the spoonful. But first, I am going to eat this sandwich.

kitchen sink salad

kitchen sink salad

I have a hard time eating salads sometimes. It bugs me when one mouthful is all greens, and the next one is all tomatoes or what have you. Perhaps I have issues, but I want to taste everything, in every bite, without having to perform a circus act on my fork to get it all into my mouth. For those reasons, this salad rocks, my, world. It is also a great way to use up odds and ends of veggies from your crisper.

In my crisper, I had purple onion, zucchini, mushrooms, carrots, red pepper and mixed greens, but feel free to put anything you want in. Chop it all up super fine and add the secret ingredients that take this salad from meh to awesome… Avocado and cheese (I used extra old cheddar), both diced finely. Mix everything up with some freshly ground black pepper, and I swear you won’t even notice this salad has no dressing. Try it. Really.

rocket pasta

rocket pasta

Leftover rice pasta really really sucks, but it can be made tolerable if you cover it in water, nuke the living crap out of it, then drain it well.
Tomato sauces are not often my pasta topping of choice but I found a new one that has rocket in it! They call it arugula, but I know better. Really really tasty sauce, and a pretty colour too. Good enough to make me forget I was eating crappy reheated rice pasta. Topped with Parmesan shavings.

no lamb potato salad

For many years, I complained that no one in my home loved to eat lamb. I always made something else, so that dinner would not go uneaten. Well, the grass is always greener let me tell you. My three and seven-year-olds now turn into wild carnivores whenever lamb is served. Vegetables? What’s that? Side dishes? What are those? Cutlery? Forget it. Gimme the flesh.

So as it turns out, leftover from last night’s dinner, there were roasted ruby potatoes, homemade tzatziki, mixed greens, and, no lamb. I sliced the potatoes in half, chopped up some green onion and yellow pepper, and mixed it all up with the tzatziki. Greek-ish potato salad served on mixed greens and topped with green onions and black pepper. And no lamb. Did I say that already?
