Hello lovelies.

Hello lovelies.

It’s been ages! Life’s never-ending string of surprises sidetracked me for a while but I’m back. In my absence, I have given the website a bit of a sprucing up and I’m looking forward to sharing more food adventures. My waistline wants a break but we’ll do that gradually.

Thinly sliced square challah topped with slices of extra old cheddar, leftover fried mushrooms and put under the broiler until just melty. Seasoned with lots of freshly cracked black pepper and sprinkled with chopped arugula. Let’s meet again soon.

Back at it

Back at it

It has been a while since we’ve lunched together. I have been eating plenty of meals but remiss with my tales… sidetracked by the this and thats of life. It is time to get back on track. Better food, better writing habits, and better lunch companions. It’s nice to see you again. Let’s do this again soon.

Last night’s dinner tossed with some fresh fixings makes a hearty salad. Leftover quinoa, romaine lettuce, heritage tomatoes, and cucumbers all tossed into a bowl. Topped with lots of fresh crumbled feta (because cheese) and lightly sprinkled with balsamic vinegar. Enjoyed in the sunshine with a puppy. Hope to see you again soon.

mmmmmango

mmmmmango

Mmmmmmmango is scrumptious. Raw, cooked, and pickled. This time of year it’s hard to get a good fresh one but this morning we sliced open an almost perfect mango. Sweet, juicy, and not squishy. Half each in each kids’ lunch, and then mangoes appeared in my lunch too.

Leftover mango chicken with green beans served on basmati rice. A large dollop of yogurt and a large dollop of mango chutney to take any curry up a notch. The challenge is to get a bit of everything in every single bite. Pretty sure I can do it.

spring has sprung

spring has sprung

It’s been a long, cold, and un-relentless winter, but it’s icy claws have finally released us! Sunshine and flowers and birds and green things are here once again, and it makes me crave fresh and light veggie-based foods. Last night for dinner, we had a family favourite… salad rolls. I think the kids like it as much for the flavour as for being able to make their own (very interestingly shaped) rolls.

Leftover vermicelli noodles, shredded carrots, sliced red peppers, iceberg lettuce, lots of cilantro and some peanut sauce, all piled on and rolled up into a rice paper wrap. Bring on the sunshine… I want to eat more fresh meals like this.

not a dream

not a dream

When preparing food, I am of course always hoping it will be delicious, but sometimes, something happens and you surpass those hopes and make the best, dish, ever. We made wonton soup last night, for the first time. Our wontons were unorthodox, and our recipe was made up, but someone must have spilled a bit of magic into the pot because it was amazing.

I chopped up some leftover pork tenderloin, baby shrimp, and ginger, mixed it with an egg, a dash of Bragg’s soy sauce and some rice vinegar. We wrapped spoonfuls of this mixture in wonton wrappers and dropped them into a pot of boiling chicken stock, along with chopped bok choy, green onions, and carrots. All the way through dinner I was hoping there would be some soup leftover for lunch. My dream came true.

sushi sort of

sushi sort of

I had a hankering for sushi today, but not all the ingredients. What I did have, made for some yummy sort of sushi-esque hand rolls. My (probably obvious to everyone but me) tip of the day, is when checking to see how fresh the powdered wasabi is… don’t stick your nose right in the jar and take a big sniff. Enough said.

Leftover quinoa topped with avocado slices, pre-cooked baby shrimp and mayonnaise, all wrapped up in a sheet of nori. Served with a side of soy sauce and wasabi… for dipping… not sniffing.
