My (super) mama is here for the week helping me get my shit together me get organized for the upcoming busy months. For lunch, we took a whole bunch of leftovers transformed them into a dee-licious salad.
In a small bowl throw in leftover quinoa and add the chopped veggies of your choice. We had snow peas, cherry tomatoes, Spanish onion, and orange pepper. Add balsamic dressing and mix well. Fill the bottom of a large bowl with fresh baby spinach, and top with the quinoa. Decorate with speck ham (leftover from mama’s fantastic Thanksgiving appetizer), and add shaved Romano.
